Thai Green Curry

- 1 pound of chicken breast, sliced
- 1 tablespoon vegetable oil
- 3 tablespoons green curry paste
- 1 can of coconut milk
- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 cup of snap peas
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Fresh cilantro for garnish
1. In a large pot, heat the vegetable oil over medium heat.
2. Add the green curry paste and cook until fragrant.
3. Add the chicken and cook until no longer pink.
4. Stir in the coconut milk, zucchini, bell pepper, snap peas, fish sauce, and brown sugar.
5. Let the curry simmer for 15-20 minutes until the vegetables are tender.
6. Serve hot, garnished with fresh cilantro.
